Member Recipe: Zoe Brookes

This is my first of potentially three recipes, depending on what the book needs:

Vanilla Muffins with Cinnamon Sugar

1 Cup sugar
1 egg
2 Cups Flour
2 Teaspoons Baking Powder
1 Cup Milk
1/4 Cup (half stick) melted butter
3 teaspoons vanilla extract

Topping:
3 tablespoons sugar
1 tablespoon cinnamon

Preheat oven to 375 degrees. Combine Sugar and egg, mixing well. Add the rest of the dry ingredients. Once blended, add the wet ingredients. Spoon into greased or buttered muffin pans (grease/butter the tops too, because they will overflow a little), filling them up about 2/3 full.

Mix sugar and cinnamon in a small bowl and sprinkle in the center of each muffin. Bake for 15-20 minutes or until slightly golden. This should make just under a full dozen.
