Member Recipe: Lia Marcoux

My recipe for...

Lemon Poppyseed Cookies

Ingredients:
1 cup (two sticks) butter
1 cup sugar (and a little extra)
1 egg
1 teaspoon vanilla
2 teaspoons poppy seeds
1 teaspoon freshly grated lemon zest
1 cups flour

Beat softened butter together with 1 cup sugar. And egg and vanilla and mix. Beat in poppy seeds, zest, and flour; if using an electric mixture, you may have to finish mixing in the flour by hand. Cover dough and chill for 1 to 2 hours.

Preheat oven to 375 degrees. Shape dough into 1 inch balls and place them on an ungreased cookie sheet about 2 inches apart. Using a flat-bottomed glass dipped in the extra sugar, slightly flatten the balls. Bake for 8 to 10 minutes, until edges are firm and the bottoms are golden brown.

Note: these cookies store well frozen (2 to 3 weeks), but they also taste awesome when frozen, so do so at your own risk!
